Rolls of lobster, crab or shrimp make their debut on the Strip with Luke’s Lobster, the Maine-bred seafood shack known for its simple menu using sustainable ingredients. The tiny restaurant sits on the plaza of Fashion Show mall with views of Las Vegas Boulevard. Diners can sit outside while dining on the Noah’s Ark for two with its half rolls of crab, shrimp and lobster, four crab claws, drinks, chips and pickles for $52. The chalkboard menu even tells guests where today’s catch was caught.

Luke Holden opened his first Luke's Lobster in 2009 in New York City's East Village with its Maine seafood shack setting.
