Fin-Addicts Alert: Sharky’s Woodfired Mexican Grill Wants a Vegas Home

Wild caught fish and organic produce would be on the menu.

Vegan-friendly, fast casual chain Sharky’s Woodfired Mexican Grill is actively looking for a Las Vegas home to expand on its current 23 California locations. Founded in 1992 by Steve Paperno, the concept offers Mexican-American fusion dishes created with "fresh, natural and organic ingredients." They use no MSG or lard in their cooking.

The counter service restaurant has taken the unusual step of serving on ceramic plates and offering metal cutlery. Signature dishes include the Sharky's quinoa salad, made with "organic red & white quinoa, organic baby spinach, cabbage, jicama, cucumber, sweet peppers, cilantro, green onions, avocado vinaigrette topped with avocado, slices & sprinkle of toasted flax & chia seeds." Also on the menu, tacos,  stone fired pizza, craft beer, "wild-caught fish" burritos and "naked" fajita bowls.

Sharky's plan for a Vegas location will need to fit their franchise requirement of a minimum of 40 interior seats and 24 patio seats and situated close to offices and a "retail entertainment center." Their first venture outside of California will be located in Tualatin, Ore.
