Eggslut, the Los Angeles-based breakfast restaurant with long lines and a food truck lineage, confirms Eater Vegas’ October news that it is setting up shop at Cosmopolitan of Las Vegas. So far, neither restaurant nor resort confirm where the 1,500-square-foot restaurant will live inside the resort, but back in October, it was already hiring for positions.
Chef Alvin Cailan specializes in breakfast sandwiches such as the $9 Slut, "a coddled egg on top of a smooth potato purée, poached in a glass jar and served with a demi baguette," and the $7 Fairfax, made with "soft scrambled eggs and chives, cheddar cheese, caramelized onions and sriracha mayo." The Los Angeles Times reports the menu will include “a couple of Las Vegas-specific menu items that are still in progress.”
In L.A., the restaurant is only open until 4 p.m. with 20 seats, but Cailan promises that “late-night Eggslut sandwiches, after an evening out at the hotel's Marquee nightclub, are also a possibility.”
Expect a 2016 opening.
