Once planned for November, Lo-Lo's Chicken & Waffles is now on course for a January debut and is feeling confident enough to be hiring staff to serve in their "underground soul food revolution."

Set to take over a shuttered 6,099-square-foot Tony Roma's, Breslin Builders is the design-build team behind the project. Creator Larry "Lo-Lo" White opened his first Phoenix location in 2002, which has now expanded to five local restaurants and a sixth in Omaha.

The menu offers versions of what they call "hood classics," including the "Nay-Nay's" dish of "two delicious waffles, two eggs & bowl of grits" and "Betty's Boob" featuring "one juicy breast & one delicious waffle."

A full menu of other Southern staples includes chicken smothered in gravy and onions, fried catfish, plus a full fried roster of green tomatoes, corn fritters, gizzards, green beans and "stupid fries" topped with chicken, gravy and onions, green and red bell peppers covered with cheese.

Get your "drank on" with sweet tea and Kool-Aid uniquely provided on tap. Celebrity fans include Charles Barkley, Shaquille O'Neal and Muhammad Ali.

The space overhaul includes "a complete kitchen remodel, bar remodel, dining room finish changes and addition of a new outdoor patio area."
