Truffle Season Invades Delmonico and an Autumn Menu at Fleming's

Plus Ferraro's 30th anniversary specials.

VENETIAN — Emeril Lagasse's Delmonico Steakhouse brings on truffle season Nov. 16-22 with eight special menu items created by chef de cuisine Ronnie Rainwater with wine pairings from master sommelier Kevin Vogt to accent the truffle experience. Order up crispy sweetbreads over wild mushrooms and fontina toast, parsley garlic oil and fresh black truffles for $25 paired with Pinot Gris Reserve, Domaine Trimbach, Alsace, France 2011 for $12; or Iberico ham and poached golden fertile egg with shaved asparagus frisée and fresh white truffles for $40 paired with Sancerre, Pascal Jolivet, Loire Valley, France 2013 for $12 as appetizers. Salad options include a black truffled cured foie gras, mache lettuce, baguette crouton, aged balsamic and braised artichoke for $30 paired with Condrieu "La Petite Cote" Cuilleron, Rhone Valley, France 2006 for $28; or an Alaskan red king crab, little gem lettuce, fresh citrus, crushed pistachios, champagne vinaigrette and fresh white truffles for $35 paired with Chablis Premier Cru Montee de Tonnerre, Brocard, Burgundy, France 2010 for $19. Two entree options include a rabbit fricassee over pappardelle pasta with fresh shaved black truffles for $50 paired with Nuits-Saint-Georges, Domaine Moillard, Burgundy, France 2010 for $24; or Gulf flounder with salsify purée, braised radishes, thyme brown butter and fresh white truffles for $58 paired with Puligny-Montrachet, Domaine Caroline Parent, Burgundy, France 2013 for $29. On the dessert menu, white truffle ice cream for $15, or roasted kabocha squash and truffle mascarpone parfait with truffle candied kabocha squash for $18, each paired with Madeira, Barbeito Bual Reserva Velha, Spain, 1953 for $39. TOWN SQUARE and WESTSIDE — Fleming’s Prime Steakhouse & Wine Bar has a three-course autumn menu that starts with a bowl of smoked cheddar and Gruyere soup infused with the deep flavors of Stella Artois. For the main course, choose from three different options: an 8-ounce filet mignon for $54.95, a 12-ounce filet mignon for $59.95 or a 14-ounce bone-in filet mignon for $64.95. Entrees are served with a duo of harlequin lobster tails stuffed with blue crabmeat and topped with béarnaise sauce. EASTSIDE — Ferraro’s Italian Restaurant & Wine Bar celebrates 30 years in business with an anniversary dinner for $30.30 per person Nov. 6-8 and again Nov. 13-15.
