Herringbone Sets an Opening Date Just in Time To Ring in the New Year

Brian Malarkey's second Las Vegas restaurant has two New Year's Eve packages.

Chef Brian Malarkey’s second Las Vegas restaurant now has an opening date. Herringbone at Aria plans to debut on Monday, Dec. 28.

The restaurant plans two New Year’s Eve packages, a $185 option from 6 to 7:30 p.m. and a $295 option from 8 p.m. to midnight that includes an open bar.

Executive chef Geno Bernardo of Nove Italiano fame plans to serve Baja stone crab with crispy rice, Chinese sausage, ginger, cilantro and peanuts and bone marrow and escargot with garlic and parsley sauce. While cocktails are not included in the price of the first option, guests can order the Grow a Pear with cucumber-infused gin, cilantro, jalapeño, St. Germain and lemon and the A Buncha Malarkey with Jack Daniels, Ancho Reyes Chili Liqueur, mint, lemon and peach bitters.

Guests can be among the first to see the indoor and outdoor seating and hear live music in the space.
