Harvest by Roy Ellamar Gets Bellagio Opening Date and Menu

It took barely four months to switch Sensi at the Bellagio into Harvest by Roy Ellamar, with the executive chef now free to fully develop a menu of "locally-sourced rustic cooking."

Reservations for Harvest are now being taken for Thursday, Dec. 24, with future dates indicating the remodeled space will only be serving dinner. While the plywood is still up, inside expect a promised "elemental setting with natural wood flooring and hand-blown light fixtures," an exhibition kitchen and prudently for this hidden resort corner close to the convention rooms, a new lounge at the front entrance.

On the menu, the dishes are defined by themes such as "ranch," "board" and "stone oven" and will also feature the "snack wagon delights," a traveling cart presenting chef Ellamar’s "creations of the moment" to be offered table side. Promised selections include smoked salmon belly dip in a jar "paired with an everything croissant and broccoli raab pesto served with naan bread."

For the fish of the day, and for the most particular of diners, the precise fishing vessel and captain's name will be made available to complete the narrative of your fish's arrival from sea to plate.
