Take a look inside Brigg’s Oyster Co., the revamped oyster bar at Suncoast. An exhibition kitchen as the centerpiece lets guests watch their dishes being made. Around that, a modern bistro feel. Guests can find specials on the chalkboard entryway. Polished woods and metals, convex mirrors and black-and-white artwork surround the space. Guests sit at tufted crimson banquettes that flank the main serving counter.
The menu features classic seafood dishes such as a creamy corn and potato chowder, seafood gumbo with shrimp and lobster and a shrimp cocktail. Main dishes include a lobster roll, featuring Maine lobster in a creamy basil and mustard mayo, wrapped in a soft toasted bun and served with home fries and the house slaw; a pan roast of lobster, shrimp, crab, fresh tomatoes and brandy cream; a seafood Cobb salad with bacon, avocado, egg, tomato, shrimp and crab with house-made bleu cheese dressing; and a pan-seared bistro steak with a wine and mushroom demi-glace.
Ahi tuna has a special place on the menu, served with a stack of wonton, ahi, rice, avocado and tomato concasse, as tacos with spicy ponzu sauce and barbecue mayo; or in sushi.
Of course there are oysters on the menu from Pacific Coast Kumamotos to Blue Point oysters of the East Coast. Chilled New Zealand mussels come served in a cilantro lemon infusion.
