Starting today Jardin joins the mix at Encore Las Vegas, taking over the former Botero space with seasonal American dishes.
Executive chef Joseph Zanelli, previously at Andiron Steak & Sea, handles the three-meal kitchen while Wynn mixologist Damian Cross oversees the bar program.
Look for dishes such as "bacon & eggs" with kurobuta pork belly and quail eggs, an organic salmon with herb crust and American Wagyu ribeye cap with duck fat potatoes. A three-course prix-fixe menu for $55 per person is also available.
Breakfast and lunch feature brown butter crepes with chantilly cream, caramelized bananas and Nutella; sa hort rib hash with baked eggs, roasted poblanos; and crispy buttermilk chicken sandwich served with mustard slaw, garlic & herb ranch.
Some of Cross’ cocktails include vanilla rose with Tru Organic vanilla vodka, Cartron Grapefruit Liqueur, simple syrup and Fentimans rose lemonade soda and an orange lavender mule with Grey Goose L’Orange vodka, lavender simple, lavender and ginger beer. The Jardin Manhattan uses Bulleit Bourbon, Henri Giraud Ratafia and Peychaud’s.
Another interesting touch here, a classic Moscow mule served table side bottle-service with the drink served in large format copper cups with a ladle for sharing. Both a bloody Mary and mimosa cart service roll for brunch.
Wynn’s wine director Mark Thomas created the list of 100 wines and varietals, with more than 20 wines by the glass and a sommelier to guide guests through the experience.
