When 65 brunches in Las Vegas just aren’t enough, along comes STK at the Cosmopolitan of Las Vegas, kicking of the Sunday Brunch Club on Sunday, Jan. 10. Music, food and cocktails are the calling cards of this brunch from executive chef Stephen Hopcraft, who takes his cue from film with "Previews," "Featured Presentations" and "Encores."
Look for a Cobb salad with bacon, blue cheese and boiled egg; beef tartare with yuzu kosho, pickled mushrooms and papadums; and smoked salmon with bagel chips, créme cheese and red onion on the "Previews" section.
STK n' L'eggs features a six-ounce filet, two eggs your way and breakfast potato; a pork belly Benedict comes on a bao bun with yuzu Hollandaise and poached egg; the shrimp and grits come with jalapeño, cheddar cheese and roasted tomato; and the brunch club features avocado, heirloom tomato and herb mayo on the "Feature Presentations" menu.
Pastry chef Brigette Contreras created the "Encores" that include a cinnamon roll with cream cheese frosting; milk and cookies; and the STKy Bun.
Beverage manager Jason Shullo created new concoctions such as the Strawberry Cobbler with Belvedere, muddled strawberry and graham cracker crust; Just Peachy with Prosecco and white peach puree; and Toddy with Some Body with Woodford Reserve, cinnamon and lemon.
A barista wanders the room with a rolling coffee cart with coffee drinks, including cappuccinos, chai tea lattes, mochas and caramel macchiatos. A bottomless Bloody Mary Bar lets guests create their own.
Servers wearing pajamas and nightshirts handle the mimosa bottle service that uses cold-pressed juice mixers, fresh fruit slices and sugar-rimmed flutes.
A photo booth complete with props can capture the memories of brunch.
