Town Square still promotes Loco Cantina as arriving by the end of the year, but the second-level Mexican restaurant needs a little more time to launch "the flavor of Mexican street food and the fun of a fiesta."
Filling the 4,943-square-foot space long vacated by Bar Louie, owner Tom Sheehan has updated the company's Facebook page to explain construction began in late October and the former Adobe Gila's project is now aiming for a "beginning of 2016" debut.
Sitting above a Sketchers and Gymboree, Loco Cantina promises a "high-energy atmosphere" with nightly live music, and plenty of sports tuned TVs in the restaurant and bar serving "hand shaken craft Margaritas and cocktails, 40 tequilas and a variety of draft and bottled beer." The patio will also be kept from its Bar Louie days.
Menu prices will range "from $8 - $12," focused on "tacos, tortas and tostadas" and kitchen testing has so far included tacos al pastor, "Mexican mac and cheese," chorizo smashed potatoes, queso fundido, tortilla soup and a barbacoa taco made with "beef short rib with fresh cilantro, pickled red onion, Mexican slaw and jicama."
