Top Chef alum Brian Malarkey debuts his second Las Vegas restaurant today with his seafood stop Herringbone opening in the former Gold Lounge space at Aria. Aside from seafood, the California-inspired coastal cuisine restaurant features "responsibly sourced meat" paired with produce found locally from former Nove Italiano chef Geno Bernardo.
The restaurant plans to feature "lounge-like" indoor seating, an outdoor bar and live acoustic sets. The restaurant also features a patio overlooking the resort’s pool area serving up flatbreads, sharable plates and small bites.
Guests here can sample small plates, a lunch menu starting in January or a full dinner experience. Self-described as a menu dotted with "whimsy," dishes include California-sourced seafood, hearty steaks and choices like meatballs upgraded with "Nana's Pork Gravy" and the indulgent dare of "Death by Potatoes."
