Scheduled for a mid-January debut, Big B’s Texas BBQ will take over a former Jason's Deli and bring the smells and smoke of a Texas barbecue right into the dining room experience.
Created by owner and manager Natalia Badzjo and her grilling husband Brian Buechner, the Saint Rose Pavilion space will offer 12-hour smoked brisket and dry rubbed meats, slow smoked over Mesquite and oak.
The casual concept plans to install rotating barbecue pits "right behind the register." Once you place your order, the meats will then be sliced, weighed, served on butcher paper and presented with "generous portions of bread."
A self-serve fountain drink and condiment station will include "pickles, pickled carrots, jalapeños and cherry peppers" with barbecue sauce bottles at the tables. Seating will be arranged on long, communal picnic wooden tables, and smaller, individual tables. A hand-washing station is being prepped for the main room so guests can better manage their sauce.
A preview menu points to chicken, brisket, pork loin, baby back ribs, tri-tip, pulled pork, smoked turkey and salmon, with prices ranging from $7.99 for a half pound of pork loin to $26.00 for a full slab of ribs. Scheduled sides include baked beans, potato salad, coleslaw, corn on the cob and cream corn.
