The 7 p.m. dinner for $195 per person includes seared scallop carpaccio with 2013 Sauvignon Blanc, cinnamon smoked quail breast paired with 2012 Twomey ‘Bien Nacido’ Pinot Noir, Compart Duroc pork belly with 2010 Alexander Valley Cabernet, and espresso-encrusted Piedmontese beef tenderloin paired with three wines — 2009 Napa Valley Cabernet, 2005 Napa Valley Cabernet and 2006 Alexander Valley Cabernet.
