Next up for Downtown Summerlin? Lazy Dog Restaurant & Bar, opening its first location outside of California on Monday, April 6.
This is a spot for laid-back comfort foods from the company’s executive chef Gabriel “Gabe” Caliendo. Expect to dine on dishes such as a black and bleu burger, chicken poblano with crispy tamale cakes and a campfire pot roast. Some of the seasonal dishes include ceviche tostadas with chilled shrimp and mahi mahi on mini tostadas with guacamole.
Healthy fare can be found on the “Nutritious & Delicious” menu with lemon-caper chicken pasta and a chimichurri mahi mahi that are all under 650 calories. Other dishes are meant to share such as the hatch chili and bacon mac and cheese, caramelized Brussels sprouts and Sicilian turkey meatballs that uses a recipe from Caliendo’s grandmother.
Behind the bar find a strawberry basil mojito and as well as "clean cocktails" such as the coconut mojito.
Caliendo, who is also a home brewer, collaborated with California brewery Golden Road Brewing to develop the restaurant’s house drafts including Lazy Dog Blonde, Hefeweizen, Pale Ale, Red, IPA and Stout.
The restaurant also plans to offer brunch on the weekends with the “Hair of the Dog” bloody Mary, sunny side up pizza, wild blueberry pancakes with maple bacon butter and “The Breakfast Club” — a fried egg sandwich made with honey-cured bacon, sliced avocado, melted cheddar and Tabasco mayo served between a buttermilk biscuit.
The 9,174 square-foot restaurant that sits across from Andiron Steak & Sea features fireplaces and a massive chandelier made from Aspen logs, ledge stone and fabric- and leather-lined booths and chairs. Obviously, dog artwork finds a home on the walls. Also, the 2,038-square-foot patio will be canine friendly.
Lazy Dog Restaurant & Bar plans to be open Mondays through Fridays from 11 a.m. to midnight with happy hours from 3 to 6 p.m. and a reverse happy hour from 9 p.m. to midnight. Saturdays and Sundays the restaurant opens from 10 a.m. to midnight with brunch until 2 p.m.
