The Monte Carlo has a new interactive pairing series of dinners dubbed Booze & Bites that bring a five-course menu from one of the resort’s restaurant paired with a spirit, wine or brew.
The first tonight heads to Yusho at 6:30 p.m. with executive chef Brian Lhee pairing his dishes with sake.
Lhee puts together oysters and scallops with Harry’s Berries and nori cones paired with Banzai Bunny Blueberry Sparkling Sake. Fluke crudo with citrus, soy and tobiko paired with Konteki Daiginjo “Tears of Dawn.” Logan Poser Ramen teams up with Kikusui Funaguchi “Red.” A surf and turf of tenderloin, lobster, potato pavé, beurre monté and trumpets pairs with Kikusui Funaguchi “Black.” Finally, a strawberry cheesecake with tofu, walnut and caramel teams with Kijoshu, a sake that has been aged for eight years.

A second dinner is planned on Wednesday, April 22, with Brand Steakhouse brings wine paired with five of the restaurant’s dishes for $75.
