Searsucker debuted on Friday at Caesars Palace, and now here’s a look at the menu meant for sharing. Brian Malarkey, a finalist on Top Chef who went on to host The Taste, brought a New American menu of bites, smalls and greens to complement the ocean, ranch and farm entrees.
Look for cheddar puffers, chicken liver with toast, duck fat fries, cowboy caviar and bone marrow with a Fresno bourbon glaze.
Fish here includes an ono wahoo, East Coast scallops and a salmon with beet, orange, basil and mustard vinaigrette. Wild boar chops with a wild board bacon waffle, a filet with lobster butter and mushroom demi glace and an osso buco. Or try a duck with white beans, rabbit, pork butt or quinoa dish.
