THE DISTRICT AT GREEN VALLEY RANCH — Whist Stove & Spirits now has a new Market Made dinner series from 5 to 9 p.m. every Thursday through May 28. The organic farm-to-table menu will feature weekly hand-picked ingredients from the farmer’s market at The District. Previous selections have included smoked salmon salad with beet greens and seared grouper with popcorn shoots. The restaurant also pairs Gratzer with beer-battered fish tacos, topped with malt vinegar lemon aioli and Slow Ride Session IPA with crispy pork belly and collard greens each for $20 on April 7. TIVOLI VILLAGE — Michael Van Staden of Caesars Palace hosts a New Belgium Brewery dinner at Made LV on Wednesday, April 8. The $39 dinner includes passed oxtail spring rolls with chipotle coleslaw and white truffle barbecue sauce; pad Thai pig ears with Blue Paddle Pilsner; hand-cranked sausages; chicken, duck and foie boudin blanc, pork abd shrimp “bahn mi” sausage and vadouvan lamb merguez paired with 1554 Black Lager; Moroccan chicken tagine paired with Slow Ride Session IPA; and salted coffee chocolate stout cupcake with dulce de leche and bacon frosting paired with Salted Belgium Chocolate Stout.
