Since last July, rumors have claimed that New York’s insanely popular Italian-American restaurant Carbone would take over the Sirio space at Aria. Now Robin Leach says it’s really happening in a piece not labeled a wicked whisper and racy rumor.
Carbone owners Mario Carbone, Rich Torrisi and Jeff Zalaznick never responded to an email requesting comment, nor did representatives of MGM Resorts. So there’s that.
Carbone seems like it would fit in well in Las Vegas with its massive dishes and long waits for tables. The restaurant notes that its most prized dishes include a seafood salad, linguini vongole, lobster fra diavola, chicken scarpariello and veal parmesan.
