RED ROCK — Mercadito’s taco of the month is taco de cabeza from chef Guillermo Tellez of Tippling Hall in Chicago. It features braised beef cheeks, caramelized onions, chipotle-garlic aioli and avocado salsa for  $16.50 for four at dinner or $13.50 for three at lunch.
