Explore the Hidden Bites Inside Every Cocktail at Lago

Each cocktail from Ricardo Murcia features both an Italian twist to classics and intriguing garnishes meant to surprise and delight.

Lago’s new cocktail program at the Bellagio features a little taste of food in each drink. The new restaurant with a Milan vibe from Julian Serrano worked with the Bellagio’s master mixologist Ricardo Murcia to create Italian versions of classic cocktails with intricate garnishes.

Take for example the Rosso Bellini. It features a caramel nest with a golden raspberry inside. The drink itself features Hangar One raspberry, Toschi Fragoli wild strawberry liqueur, Prosecco, raspberry syrup and lemon juice.

The Sgroppino uses an edible cocktail sphere made from Prosecco, lemoncello, lemon sorbet and cocoa butter, all sitting on top of lemon sorbet. Guests are encouraged to pop it in their mouths before tasting the Prosecco.

Even the mojito gets a twist with fruit juices, vermouth and Prosecco, then garnished with an edible cone made from dried pineapple and filled with mini passion fruit pearls made with passion fruit puree, sugar and agar agar, a vegetarian powder.

Lago touted a leather-aged cocktail before opening, and that shows up on the menu as the Serrano Negroni, made with a special leather botarron crafted by Spanish author and artist of comic books Jesus Blasco. The drink uses Bellagio’s own hand-selected Woodford Reserve Double Oak Bourbon, Cynar artichoke bitter, Cinzano 1757 sweet vermouth and Campari before being garnished with a chorizo stuffed with caper berries.

Finally, for dessert, the restaurant serves up Tiramisu made with St. George Nola coffee liqueur, Godiva white chocolate liqueur, Tiramisú liqueur, mascarpone cheese, vanilla ice cream and cold espresso topped with chocolate curls and an Italian chocolate cookie.
