The Smashed Pig Will Bring the U.K. to Fremont Street

Husband and wife chef team Martin Swift and Linda Rodriguez will take full advantage of Swift's Liverpool heritage when their gastropub concept, The Smashed Pig, debuts this summer. Taking over the former Las Vegas Tattoo and Souvenir store, the skinny 1-860-square foot project intends to fully commit to an authentic British theme.

The Smashed Pig plans to seat 56, with a maximum occupancy of only 64 squeezing into the long, narrow layout. Guests will first encounter a six-seat bar and nearby booth seating. The middle of the pub will offer tables suitable for lunch, while the rear of the restaurant is considered the main dining room, upgraded with banquette seating.

The British theme will include "trivia" quiz nights and English Premier League soccer games on the TVs. U.K. pub staples like pasties and pies have been promised, plus a Christmas-time favorite, a fruity mincemeat pie. Artisanal beers will be available, alongside the Fremont East necessity of hand crafted cocktails.

The chef couple were both trained by Nobu Matsuhisa before working together at Hachi at Red Rock Resort. Construction continues and is on schedule for a summer arrival.
