This year would have marked singer Frank Sinatra’s 100th birthday, and now the Italian restaurant at Encore Las Vegas pays homage to the occasion with a five-course tasting menu with some of Old Blue Eyes favorite dishes.
As legend has it, Sinatra was known for ordering his favorite Italian-American dishes no matter where he traveled. At Sinatra at Encore Las Vegas, many of the Chairman of the Board’s favorite items are on display including his Oscar, Emmy and Grammy. In fact, this is the only restaurant in the world sanctioned by the Sinatra family.
Sinatra executive chef Theo Schoenegger compiled this menu. “It was an honor to be able to cook for the man himself, Frank Sinatra,” he says in a press statement. “I have fond memories of Sinatra dining at San Domenico New York after several of his shows. His favorite dishes included Spaghetti alla Chitarra con Filetto di pomodoro e basilico and Gamberoni e Cannelini. This menu represents those memories and pays tribute to the musical icon we all loved.”
The Ultimate Sinatra menu includes sautéed Santa Barbara spot prawns and cannellini beans tossed in a rosemary-garlic olive oil. Next, Frank’s Clams Posillipo — adapted from a favorite dish that Sinatra would enjoy when dining at Patsy’s restaurant in New York City — which combines Manila clams in aromatic white wine and tomato broth. Then, fusilli accented by fileto di pomodoro in a fresh tomato basil sauce. Next is Sinatra’s longtime favorite dish, veal Milanese and eggplant parmigiana with a baby arugula salad. For dessert, the Cappello with a Valrhona dark chocolate mousse confection, shaped like the fedora that Sinatra often wore, paired with a luxurious Jack Daniel’s milk chocolate panna cotta.
The menu will be available throughout the Sinatra centennial year, in addition to Sinatra’s full, a la carte menu. The Ultimate Sinatra menu is available for $125 per person. The special menu includes a copy of the newly released Ultimate Sinatra CD, a commemorative collection of some of Frank Sinatra’s greatest hits.
