RED ROCK RESORT — Brian Massie just updated the menu at Hearthstone Kitchen & Bar with heirloom watermelon salad; salmon carpaccio; halibut ceviche with compressed watermelon, avocado and basil; crispy skin turkey drumstick; and a black truffle hanger steak. The restaurant is also cracking open its cellar for Vino Monday with 50 percent off all bottles of wine under $100.
