The J. Gumbo's franchise believes Las Vegas needs some Cajun spice with their heat. The expanding concept will place their furthest west location at Chinatown's Rainbow Springs Shopping Center, occupying 1,238 square feet. The company operates more than 40 locations, including a prominent spot in Manhattan's Flatiron District, on the same block as Mario Batali's Eataly NYC.
Created by Billy Fox, Jr. a retired thoroughbred jockey and Metairie, La., native, J. Gumbo's Creole and Cajun menu includes familiar favorites like gumbo, po-boys, jambalaya and crawfish etouffee. Depending on the location and franchise owner, desserts include beignets, warm peach cobbler and bread pudding.
No official announcement of the expansion into suite 110 has been released by J. Gumbo's, nor an opening date. A Tropical Smoothie also recently signed a lease to move into the Walmart-anchored shopping center.
