Chef Daniel Boulud and chef de cuisine David Middleton created the 100 percent Angus beef patty topped with braised short rib, foie gras, confit tomato petals, frisée salad and horseradish dijonnaise on a parmesan oregano bun. Get it with French fries and a glass of Veuve Clicquot Yellow Label Brut for $50 at lunch and dinner. Other new spring dishes include spring pea spaghetti with sugar snap peas, mushroom fricassée, citrus and prosciutto; filet Rossini with beef tenderloin, seared foie gras, super green spinach, oyster mushrooms and madeira-truffle sauce; olive oil baked salmon with warm baby potatoes, roasted beets, pickled mustard seeds and horseradish cream; strawberry profiterole with strawberry gelato, warm chocolate sauce and Chantilly; and tropical passion with coconut rice pudding, passion fruit sorbet, toasted coconut and mixed tropical fruit.
