The final piece of the Red Rock Resort dining puzzle is ready to be revealed. Now Andy Masi has put together a new hospitality group to open Salute Trattoria Italiana, an Italian-inspired restaurant taking over the former Terra Rossa space at the Summerlin resort and opening this fall.
Masi teams up with chef Luciano Sautto for this restaurant that plans to serve Southern Italian dishes made from recipes passed down through generations. Sautto, who was born in Naples, Italy, got his start at his family's pizza restaurant and became a third-generation pizzaiolo. He’s worked in kitchens throughout Europe, as well as in Bianca at the Delano in Miami and as the food and beverage director at the Hotel Angeleno in Brentwood, Calif.
Salute plans to feature an entrance made of imported Italian marble with an antipasto bar serving as the main focal point of the 4,000-square-foot room.
Braised meats, fresh seafood, vegetarian dishes and specialties such as crispy zucchini flowers with sweet ricotta, pistachio pesto and amoretti, and ricotta gnocchi "Sorrentina" with blistered San Marzano tomatoes and aged parmesan pepper the menu.
Masi, who for years was known for his Light Group hospitality company that he sold to the Hakkasan Group, now has Clique Hospitality. This marks the first restaurant from the new group.
Red Rock Resort embarked on a $35 million renovation last April that brought a new restaurant row to the front. Since, Mercadito, Hearthstone Kitchen & Cellar and 8 Noodle Bar have arrived.
