Expanding into the competitive Aloha-inspired dining scene served by L&L Hawaiian Barbecue and Braddah's Island Style, Rumbi Island Grill is adding a second Las Vegas location. The Utah-based franchise already operates a spot close to UNLV on the corner Maryland Parkway and Tropicana Avenue, serving their fast casual, "tropical-inspired dishes"
The new 1,789-square-foot location will be eight miles further south, inside the Eastern Beltway Shopping Center. Rumbi currently operates 21 locations, with the majority in Utah.
Their menu specialties include rice bowls created with a choice of protein like "Luau pork," grilled chicken or steak, plus a sauce like Hawaiian teriyaki or Jamaican jerk and vegetables. Entrees include "Cabo Fish Tacos," Caribbean shrimp and their salmon or mahi "Volcano-Blackened Fish" served with a Caesar Salad. Other choices include the "Bahama Mama's Tortilla Soup" and the Kahuna Burger with grilled pineapple. Pineapple upside down cake and Key lime pie are among the desserts.
With an estimated $167,178 allocated for construction costs, a timetable for the grill's arrival has not yet been announced.
