Offering a "cozy cabin-like atmosphere" with a stuffed moose head mounted on the wall, Centennial's Hunt & Gather Cafe is having fun with a hunting theme and will soon be offering a menu focused on "high protein dishes with low carbs."

Located in the Tenaya Village retail center, in the same wing as Timbers Bar & Grill, the cafe's concept will offer "exotic flavors and uncomplicated recipes" and the owners add, "we love flavor and spices and don't skimp on quality or portions."

Inspired by American, Dominican, Puerto Rican and Mexican influences, not all dishes follow an outdoors theme, but they have branded some items to fit the mood.

"The Huntsman," is an $18, 18-inch pizza topped with pork, chicken, bacon, pepperoni, marinated beef and ham. The $10 "Crosshairs" sandwich is crafted with a "buttery croissant with turkey, cheese, lettuce, tomato served with side salad and blue cheese dressing" and "The Mammoth" is a half-pound burger, topped with Provolone, tomatoes, lettuce, onions and pickles served with garlic fries and "our house sauce," also priced at $10.

"Gamier" daily specials will be offered, alongside Guinness carnitas, trout in Riesling cream sauce and their $10 "Libre Cubano" sandwich, made with "grilled ham, pastrami, tender pork, pickles and spicy brown mustard served with fresh garlic fries."

Hunt & Gather Cafe is on track for a June debut.
