Your First Look Inside Salute, Opening This Fall

See the progress inside the southern Italian restaurant.

If all goes as planned, Red Rock Resort will debut the new Salute Trattoria Italiana in mid-September. The restaurant marks the first new venture for former Light Group founder and CEO Andy Masi and his Clique Hospitality Group with his partners Brian Massie and Shane Monaco.

Executive chef Luciano Sautto showed Eater Vegas around the 4,000-square-foot room still under construction. The restaurant takes over the former Terra Rossa space at the front of the resort.

At the front, an indoor/outdoor patio with a bar with glass panels that slide open and closed to the patio area. Next to that, the private dining room with space for 12 has its own entrance onto the patio with room for 60.

An exhibition kitchen features a pizza oven wrapped in tile and imported Italian white marble swaddles the kitchen and front entrance.

At the front, find an antipasta bar that guests at the resort can see from the entrance. Sautto says the restaurant will serve gelatos and handmade waffle cones there. The dining room itself as room for 189 with exposed wood on the ceilings and travertine and wood floors. Banquettes sit in front of the kitchen.

"We wanted it to feel cozy," Sautto says. "We want people to feel welcome."

Guests will be able to see much of the food as possible, either displayed in jars that line the wall or while it’s being cooked in the exhibition kitchen.
