Hubert Keller recounts a story about almost dying after eating tuna in Tahiti 10 years ago. The chef behind Mandalay Bay’s Fleur and Mandalay Place’s Burger Bar “was on his death bed for six months, fighting a blood infection and a nervous system infection.” It puts a different perspective on “really rough days” for Keller. “I say, ‘There’s much more than that.’”
Thomas Keller’s Per Se will pay $500,000 to settle claims that it pocketed tips meant for employees who worked at private-dining events. While the restaurant got rid of tipping in 2005, it collected a 20 percent service fee in the private dining room and told guests who inquired that it was like a tip.
