The signs are now up outside of Salute Trattoria Italiana, the new Italian-inspired restaurant taking over the former Terra Rossa space at Red Rock Resort and opening in September. The restaurant from Andy Masi and his new Clique Hospitality features fare from chef Luciano Sautto, serving Southern Italian dishes made from recipes passed down through generations. Sautto, who was born in Naples, Italy, got his start at his family's pizza restaurant and became a third-generation pizzaiolo. Expect an open kitchen, antipasto bar with homemade gelato and waffles at the front and an entrance made of imported Italian marble inside this 4,000-square-foot room. Folding glass doors open up to the patio.
