Squeeze In to Stack Up Eight Omelette Locations

Squeeze in wants to muscle into the local breakfast and lunch scene.

Already located in Reno and Sparks, California's Squeeze In breakfast and lunch restaurant chain is looking to build eight locations in Las Vegas. Home to an alien mascot and the claim of the "Best Omelettes On The Planet," Reno's Chris Lowe and Dina Gonzalez are behind the local franchise explosion, building the first three themselves and pairing with investors for the remaining five.

The casual menu features "eggs benedict, celebrity chef inspired French toast, pancakes, breakfast burritos," plus familiar fare of "souped up" sandwiches, salads and "really boss" burgers. Gluten-free, vegetarian and vegan menu choices are prominently featured.

Omelets remain their specialty, including the Randi Chandi, created with bacon, tomatoes and mushrooms, The Spanish Flay tribute to chef Bobby Flay, made with "finely diced red bell peppers and potatoes sautéed with smoked paprika in butter, and folded with hand grated fresh Monterey Jack cheese into seasoned eggs," and the Holy Crab!, built with "a full 1/4 pound of King Crab sautéed in butter with sliced green onions, then folded into eggs with Monterey jack cheese, and topped with avocado."

Created in 1974 as a family business, each location is open daily from 7 a.m. to 2 p.m. No timetable or location for the first Squeeze In arrival into Las Vegas has been announced.
