Meet Frédéric Don, the new chef de cuisine at Twist by Pierre Gagnaire at Mandarin Oriental. Don makes the move to Las Vegas from another Pierre Gagnaire restaurant, The Gallery at Sketch in London, where he served as head chef since 2013.
Don studied at Les Petites Bruyeres a St Chamond and later trained as an apprentice at Restaurant Pierre Orsi in Lyon, France. He joined Flocon de Sel in Megève, France, in 2008, where he served as sous chef and helped lead the team to achieving three Michelin stars.
Don replaces Ryuki Kawasaki, who left Twist after nearly three years to become the chef de cuisine at The Dome at Lebua in Bangkok, Thailand, earlier this year.
“We are eagerly anticipating the addition of chef Don to Twist by Pierre Gagnaire,” Robert Jenny, director of food and beverage at Mandarin Oriental in Las Vegas, says in a press statement. “He will add a unique perspective and enthusiastic passion that will inspire the team at Twist.”
