Brian Malarkey's Herringbone Confirmed for Aria

Hakkasan Group confirms Eater Vegas’ exclusive reveal that Brian Malarkey’s Herringbone is indeed taking over the Gold Boutique Nightclub & Lounge space at Aria and former Nove Italiano chef Geno Bernardo will helm the kitchen.

Malarkey, who already has Searsucker at Caesars Palace, plans to serve up seafood and “responsibly sourced” meat with produce found at the farmers market. Bernardo was well known for using a farm in Pahrump to grow many of his produce while he was a Nove.

Malarkey is already teasing dishes such as skate wing schnitzel with spätzle, sea beans, Hen of the Woods mushrooms and mustard jus and a roasted Colorado lamb rack with squash, corn, basil, piquillos, padrons and harissa aioli.

Munge Leung is designing the space with an estimated construction budget of $4.2 million “inspired by trips to the shore” with light woods, layered textures and a patio.

Once open in November, or this winter as teased in a press release, Herringbone plans to be open for lunch and dinner daily, a weekday happy hour with oysters and brunch.

Malarkey just opened his latest Herringbone in Santa Monica and already has locations in San Diego and Los Angeles.
