Sensi OUT, Harvest By Roy Ellamar IN at Bellagio

Sensi will shutter this weekend, returning anew later this year.

As Eater Vegas first revealed and is now confirmed, chef Roy Ellamar will oversee an an estimated $843,150 remodel of Sensi at the Bellagio and turn it into Harvest By Roy Ellamar later this year. The last chance to try Sensi is Sunday Sept. 13.

Keeping Ellamar's commitment to local sourcing, the new venture expands on that mission and keeps the popular chef in a familiar home.

I am proud to welcome you to Harvest, where land meets sea, and simplicity meets sensational.

Here, we pay homage to the origin of food, with farm-fresh ingredients and naturally-raised products. Being born into a family of farmers, hunters and fisherman, I understand the process food goes through in the journey from farm-to-table. I hope to share this experience with you by ensuring quality, purity and freshness prevail in every creation.

We invite you to share plates and moments, and be captivated by the reinvention of locally-sourced rustic cooking.

Harvest will debut with new chairs, tables and "decorative pendant lighting," plus modifications in the kitchen, that will remove the tandoori grill and Asian wok station. The biggest physical change will be creating a new lounge at the front entrance and an expansion of the existing square bar.

Harvest By Roy Ellamar will open "late 2015."
