From Maine to the East Village and now to the Strip, rapidly expanding quick-service seafood concept Luke's Lobster is coming to Las Vegas this November. The specific location is yet to be confirmed, but the arrival of the company's first local "shack" is well underway.

Created by former lobsterman Luke Holden in New York in 2009, Luke's Lobster serves traceable and sustainable seafood in its New York, New Jersey, D.C., Philadelphia, Chicago, and Boston locations.

The specialty of the shack is the lobster roll, built with no filling, placed in a griddled New England split-top bun. All that is added is a "a swipe of mayo, a sprinkle of lemon butter and a dash of our secret spices," according to official copy.

Keeping it simple, the rest of the menu focuses on crab and shrimp rolls, plus a selection of chowders and bisques, crab claws, chips and Maine microbrews.
