When Marc Sgrizzi shuttered his Parma by Chef Marc back in July, almost immediately he promised his loyal fanbase he was working on something new. That venture will be Chef Marc's Trattoria, scheduled to fill a space a few miles south of Parma, at the Lakeside Village Plaza, close to an Outback Steakhouse.
Described as an "authentic Italian trattoria," the restaurant will also host "cooking classes and demonstrations revealing great artisan recipes that I learned in Italy and throughout my career." Already planned: a pancetta class, "with 10 people signing up to make their very own artisan cured pancetta. Where I will age it for you in my walk-in cooler."
An opening date has yet to be revealed. Since arriving in Las Vegas in 2000, the chef has also been behind Marc’s Italian Steak House, Marc’s World Cuisine, Mezzo, and at one time, three locations of Novecento 900 Pizzeria.
