You won't recognize the former Firefly Tapas Kitchen & Bar on Eastern early next year after chef Kerry Simon and restaurateur Scott Frost reveal their much-anticipated twist on a modern gastropub.
The 4,732-square-foot Henderson location will become "light, bright, airy, floral and sexy, much in the feminine steakhouse vein of an STK or Andiron Steak & Sea" and is on target for a January or February 2016 debut.
Frost, the president of Titan Brands, the company behind Slice of Vegas and Hussong’s Cantina, explains the menu will feature some surprises and "we'll invite patrons to try more adventurous fare such as escargot empanada with tamarind miso gelee or rum & vanilla cured smoked marlin tacos."
Fans of chef Simon will want to take the drive out to Henderson to sample once again what the team have dubbed "Kerry's classics," including "crispy sesame rice with spicy tuna and eel sauce and wok charred edamame with ginger salt, lime, and togarashi."
Although a name has not yet been finalized, preliminary design and floor plans are well advanced. The building is noted for the expansive views of the Las Vegas Valley.
