Vegas Seven has broken the news Mathieu Chartron, executive chef of Restaurant Guy Savoy, will leave his position at the end of the year and return to France.
Charton has held the enviable post since 2010. Earlier this year the twenty-eight-year-old was named a semifinalist in the Rising Star of the Year category from the James Beard Foundation.
Vegas Seven reports he will return to his parents' restaurant in Saint Donat sur L'Herbasse, France, where he began his precocious culinary journey at the age of 12. His swift career trajectory sent him to Paris to work at Restaurant Guy Savoy under the master chef himself. By 2009, he took over the sous chef position at Savoy’s then newly-opened Las Vegas restaurant, Restaurant Guy Savoy at Caesars Palace.
A replacement has yet to be revealed.
