Just as Brian Malarkey opens his new restaurant Herringbone at Aria comes word that his chef de cuisine at Searsucker Jean Paul Labadie just left his position at Malarkey’s first Las Vegas restaurant at Caesars Palace.
The Puerto Rico-born chef has spent about two decades cooking in Las Vegas. In 2011, he was ready to leave Las Vegas after departing the French restaurant in Desert Shores Marche Bacchus. Instead, he moved to the neighboring Garfield’s as the executive chef and general manager. From there, he moved to Todd English P.U.B., the gastropub from the Boston bad boy chef at Crystals. He also appeared on an episode of the Food Network’s Extreme Chef.
Labadie helped open Malarkey’s cowboy-themed Searsucker last March. No word on what his next move will be.
