Rumors Point to Truck-U Barbeque's Mike Minor Opening a Restaurant

Minor plans to team up with his Border Grill buddy Kent Harman on a Latin concept.

Border Grill alums Kent Harman and Mike Minor team up once again to bring a new restaurant to Las Vegas. Rumor has it that the duo wants to open a Latin restaurant that leans toward Mexican paired with some of the items on Minor’s Truck-U Barbeque food truck menu that he launched two years ago.

Harman and Minor have an eye on opening multiple locations across Las Vegas with a targeted 2016 or 2017 opening, obviously depending on the locations they pick and construction timelines.

Before launching Truck-U in 2014, Minor was the executive chef at Border Grill at Mandalay Bay and Harman was the director of operations. Minor focuses on a meld of Mexican and barbecue dishes, all with a Southern twist. His “meat candy on wheels" uses a sticky molasses sweet sauce. Tortas made with short ribs, pork butt or chipotle brisket, Mexican corn cones, maple bacon churros and of course tacos in varieties such as fried chicken, blackened catfish and pork belly are among the specialties.
