Libre Mexican Cantina is just about to open at Red Rock Resort with a full lineup of Mexican fare in the former Mercadito space. Clique Hospitality’s newest venue sandwiched between the company’s Hearthstone Kitchen & Cellar and Salute Trattoria Italiana at the resort features dishes from Brian Massie.
New dishes on the menu include a queso fundido and the carne asada skirt steak as well as shrimp vera cruz and shrimp ceviche. Look for a vegan friendly side of the menu as well with the grilled portobello taco and chile rellenos as well as some gluten-free dishes.
The space is currently going through renovations and expects to open on Feb. 4.
Mercadito shuttered at the end of 2015. Clique Hospitality just opened its eponymous bar and lounge at Cosmopolitan of Las Vegas and plans to debut Bottiglia, an Italian restaurant, and Borracha, a Mexican eatery, at Green Valley Ranch in April and May 2016, respectively.
Alessandro Munge of Munge Studios is creating the looks there. Borracha will serve Mexican cuisine while Bottiglia plans to dish up rustic, farm fresh fare with the extensive wine selection and menu of a traditional enoteca.
Clique Hospitality was founded by Andy Masi, the former Light Group founder and CEO, along with his partners Massie and Shane Monaco.
