Oh, Vegas, you’re about to go crazy at least if Loco Cantina has its way. The new Mexican street eats restaurant plans to open at Town Square on Monday, Feb. 8.
Owner Steve Cohee also operates the Mexican-inspired bar and grill Adobe Gila's in Illinois, Ohio and Florida.
House-made salsas and chorizo drive the lunch and dinner menu here. Look for aperitivos (starters) such as Mexican mac and cheese with chorizo, jack cheese, jalapeños, tomatoes and cilantro and ensaladas including the Cantina Loco with greens mixed with Nueske's applewood smoked bacon, Cotija cheese, avocado, pickled red onion, roasted Marcona almonds and cider vinaigrette.
Three different tortas include a beef short rib, roasted chicken and carnitas. Tostadas get stuffed with chorizo, chicken or short ribs, all topped with black bean purée, queso fresco, greens, pickled red onion and habanero salsa.
Of course, there are tacos, six in fact, that feature fillings including barbacoa, shrimp and pastor, an ancho chili marinated pork, pineapple, pickled peppers and onions and fresh cilantro.
More than 40 tequilas line the bar. As expected, margaritas dominate the drinks menu. Look for the Locorita with Jose Cuervo, house made sour, fresh lime and Corona and Kentucky Margarita with Maker’s Mark, agave nectar, red sea salt and lime. Other concoctions include the Jalisco's Old Fashioned with Herradura Reposado, Demerara sugar, oranges, bitters and Luxardo cherries and Fiesta Lemonade with Bulleit Bourbon, fresh lemonade and basil. Blanco and rojo sangria, white and red wines, five Mexican canned beers and 20 beers on tap will also be available.
