Julien Asseo IN as Executive Chef at Restaurant Guy Savoy

He takes over from Mathieu Chartron.

Mathieu Chartron left Restaurant Guy Savoy at Caesars Palace back in October, and now the Michelin-starred restaurant announces a chef to take his place. Julien Asseo takes over as the executive chef, overseeing operations.

Asseo first joined Restaurant Guy Savoy in 2011 as a sous chef and eventually advanced to chef de cuisine.

The Libourne, France, native grew up on his parents’ vineyard. He studied at the Lycée Hôtelier de Gascogne near Bordeaux, where he obtained a bachelor’s degree in culinary arts. After finishing culinary school, Asseo moved to Paris to work at La Fontain de Mars, where he advanced from commis to chef de partie. After spending some time in Paris, Asseo decided to take his skills to America, where he opened Rivera in Los Angeles as a sous chef.

In 2009, Asseo moved to Las Vegas to work under chefs Rick Moonen and Joel Robuchon.

This May, Restaurant Guy Savoy celebrates its 10th anniversary this May.
