The Goodwich, the little sandwich shop in the parking lot of Dino’s Lounge, already announced plans to briefly close while it prepares for its new, bigger and more permanent location inside the Soho Lofts. Now comes word that owners Josh Clark and Theo van Soest plan to turn the original location into a “culinary incubator.”
Over on Facebook, the Goodwich says that former Comme Ca Los Angeles sous chef Justin Kingsley Hall with his SLO-boy concept will be the first to take over the mini location with rustic French-American fare. Las Vegas Weekly reports that future restaurateurs will rent out the space for three months at a time with the option to re-up for an additional three months. Some of the dishes Kingsley Hall plans to serve include a "Santa Maria-style tri-tip sandwich, a deep fried Cornish hen and beef cheek tamale with popcorn masa."
Clark and van Soest are toying with the name TBD.
