Here's your early first word on a new bakery headed to Spring Valley, featuring some high-caliber chef credentials behind the scenes. Cafe Breizh will take over 2,308-square-foot of vacant space at the Apache Center, close to the intersection of Spring Mountain and Fort Apache toads.

Partners in the venture are Jerome Marchand and chef Pierre Gatel, who spent five years at the Wynn and Encore resorts rising to the position of executive pastry chef. His earlier career includes three years as pastry chef at New York’s Alain Ducasse at the Essex House and five years at Caesars Palace’s Payard Patisserie & Bistro.

Gatel was born in Brittany, or Breizh in the local Breton language. Serving sweet and savory creations, the project expects to be open daily from 7 a.m. to 7 p.m., with patio seating in front of the cafe. Aiming to serve "delicious, affordable food that guests will want to return to week after week," they will also bake everything on site.

A very preliminary menu includes croissants, cinnamon rolls, lemon tarts, eclairs, brioche bread pudding and crème fraîche cheesecake. Cafe Breizh is announced as "coming soon."
