Special dishes include huauzontles (fried huauzontles, seared queso fresco and salsa roja), ensalada moradita (salt roasted beets, beet mole, purslane and carrot dressing), sweetbread taco (fried sweetbreads, salsa xec and radish), tamal rojo (fresh masa, braised pork, tomato and serrano), pato con mole manchamanteles (duck leg confit, pineapple pico and mole manchamanteles), frijoles refritos con queso (refried bean, queso fresco, crema and fresh tortillas), Feast of Santa Anita (atole espuma cone, yemita and charred corn husk) and pan de muerto (sweet pastry served with Mexican chocolate).
