VENETIAN — Emeril Lagasse's Delmonico Steakhouse holds its Truffle Week with a special menu from Nov. 7-13 in celebration of truffle season. Chef de cuisine Ronnie Rainwater created eight dishes with wine pairings from sommelier Dylan Amos. Dishes include escargot over wild mushroom puff pastry, garlic parsley oil and fresh black truffles; a soft potato purée, poached golden fertile egg, fried artichokes and shaved white truffles; poached Nigerian prawn, hearts of palm, mache, fresh citrus and fresh white truffles; duck and foie gras terrine, cherry compote, chicory, toasted pistachios and fresh black truffles; braised veal cheeks, mascarpone polenta, roasted vegetables, fresh black truffles and hazelnut gremolata; lobster risotto, white Italian truffles and fresh herbs; white truffle ice cream; and goat cheese crepe, blood orange caramel and fresh black truffles.
