One of the most anticipated restaurants debuting in 2017, work on Monzo in Chinatown is progressing at a rapid pace.
Taking over the shuttered Mr. Tofu at The Center at Spring Mountain retail center in Chinatown, Monzo will expand on the Los Angeles original, Marugame Monzo, which debuted in L.A.’s Little Tokyo in 2013.
The concept joins the Mon Restaurant Group empire that includes local favorites Sushi Mon, Monta, Goyemon, Monta Chaya and Kabuto.
WG Constructors, who also built Hobak Korean BBQ, Yui Edomae Sushi and Mon's most recent project Ramen Kobo, have shared the recent progress including the creation of the glass-walled kitchen that will permit views of the hand-pulled noodles being chopped by a machine resembling a paper cutter.
The restaurant’s specialty is thick, rectangular, Sanuki-style udon noodles made famous in Marugame, Japan. Monzo’s kitchen staff are sent to the city to receive an authentic education in how to prepare the dish.
A very popular destination in Los Angeles, already promised for the Las Vegas menu, "Duck Nanban Udon," "Gratin Udon" and "Beef Tataki" side dishes. An exact opening date has yet to be announced.
